Sausage Dumpling Casserole
- 1 package Jimmy Dean Sausage
- 1/2 small onion, chopped
- 1 large jar sauerkraut, drained
- 3 eggs
- 3 tbsp water
- 1 cup flour
In a large pan, add sausage and onion; cook until done; add sauerkraut and allow to simmer. In a bowl combine eggs, water and flour, mix steadily until mixture is a soft dough, just right for dropping from a spoon. Bring salted water to boil in a separate kettle; drop dough by small spoonfuls into boiling water; cook for 3 — 5 minutes until done. Remove dumplings from water and add to sausage mixture; salt and pepper to taste.
Mandarin Orange Bars
Batter:
- 2 cups flour
- 2 cups sugar
- 2 tsp soda
- 2 eggs
- 2 small cans mandarin oranges (keep juice from 1 can)
Frosting:
- 2 1/3 cups powdered sugar
- 1/2 cup butter
- 1 oz pkg cream cheese
- 1/4 tsp vanilla
Preheat oven to 350 degrees. Combine flour, sugar, soda and eggs in a large mixing bowl and mix well; add mandarin oranges with juice and mix into batter, breaking up the oranges. Fold in second can of oranges leaving bigger pieces of oranges in batter. Pour into a greased 9 x 13 in pan and bake for 35 — 40 minutes. Allow to cool.
Combine frosting ingredients in a mixing bowl and beat well. Hint- the longer mixture is beaten the fluffier the frosting. Spread frosting over bars and serve.
