Chicken Rice Delight
- 1 pkg. Uncle Ben’s long-grain & wild rice
- 2 large chicken breasts, chopped or diced
- 1 small onion, chopped
- 2 cans cream of chicken soup
- 3/4 cup mayonnaise
- 1 can water chestnuts, chopped
- 1 green pepper, chopped
- 1-2 cups crushed potato chips
Preheat oven to 325 degrees. Prepare rice according to directions on the package. Cook the chicken until done and chop or dice into bite size pieces. Mix soup and mayonnaise (may want to thin with 1/4 cup water). Mix all ingredients together and put crushed potato chips on top. Bake for 45 minutes.
Popcorn Salad
- 1/3 cup sugar
- 2 tsp. vinegar
- 1 cup mayonnaise
- 1 cup finely chopped celery
- 1 can water chestnuts, chopped
- 1/4 cup sliced green onion
- 1/2 cup cheddar cheese
- 1/4 cup bacon bits
- 6 cups popped popcorn
Mix all ingredients in a large bowl except popcorn. Add popcorn just before serving.
