#313 – Cheesy Hamburger Hot Dish & Pineapple Bake

Cheesy Hamburger Hot Dish

  • 1 carrot slivered
  • 1 onion, chopped into small pieces
  • 1 Tbsp. olive oil
  • 1 yellow bell pepper, slivered
  • 1 lb. hamburger
  • 1 cup tomato sauce
  • Salt and pepper to taste
  • 1/2 tsp. paprika
  • 2-3 potatoes, sliced
  • 3 cups mozzarella cheese divided

 

Preheat oven to 350 degrees.  In a skillet, fry carrots and onion in olive oil until softened; add yellow pepper and cook for 1-2 minutes.  Add hamburger, fry until browned.  Add tomato sauce, salt, pepper and paprika, let simmer for 5-10 minutes.  In a greased 9×13-inch baking dish, sprinkle 1 cup mozzarella cheese on the bottom, place potatoes over cheese, layer 1 cup of mozzarella cheese over potatoes, layer hamburger mixture over cheese and top with last cup of mozzarella cheese.  Bake for 40-45 minutes.

Pineapple Bake

  • 2- 20 oz. cans pineapple chunks, reserve 2 Tbsps. juice
  • 2 cups cheddar cheese
  • 2 Tbsp. flour
  • 1/2 cup butter, melted
  • 3/4 roll Ritz crackers, crumbled

 

Preheat oven to 350 degrees.  Mix pineapple, juice, cheese, flour and butter together; pour into a greased 9×13-inch baking dish.  Top with crackers just before baking.  Bake for 30 minutes.
