Ham and Pea Pasta
- 16 oz. pasta of your choice
- 4 oz. ham, cut into cubes or strips
- 2 1/2 cups fresh or frozen peas
- 1 large onion, chopped
- 1 cup heavy cream
- 5 cups broth of your choice
- 1/2 cup grated parmesan cheese
- Salt to taste
- Pepper to taste
Add the ham, peas, onion, and pasta to a large pot. Add the cream and broth; bring to a rolling boil over high heat leaving the pot uncovered. Once the liquids boil, reduce heat to medium and let the pasta simmer for 12-15 minutes until the pasta is al dente. Stir occasionally as the pasta cooks. When the pasta is done, remove the pot from the heat. Stir in grated parmesan cheese and season the pea and ham pasta with salt and pepper according to your taste. Sprinkle with parmesan cheese and black pepper before serving.
Crunchy Coleslaw
- 1/2 cup slivered almonds
- 1/2 cup vegetable oil
- 2 tsp. sesame seeds
- 3 Tbsp. sugar
- 1 pkg. coleslaw mix
- 3 Tbsp. vinegar
- 4 green onions, sliced
- 1 tsp. salt
- 1 pkg. Ramen Chicken Flavor Noodles
- 1/2 tsp. pepper
Toast almonds and sesame seeds in frying pan or toaster oven until lightly browned. Combine the oil, sugar, vinegar, salt, and pepper to make dressing, set aside. Put coleslaw and onion in a large bowl and mix. Just before serving, break up noodles and mix with coleslaw, onions, almonds, and seeds; pour dressing over all and toss to mix.
