#292 – Sausage Breakfast Burrito & Strawberry Banana Cheesecake Salad

Breakfast Burrito

  • 1 lb. pork breakfast sausage
  • 1/2 red onion, finely chopped
  • 1/2 sweet yellow onion, finely chopped
  • 1 red pepper, finely diced
  • 1 jalapeno pepper, seeded and minced
  • 6 large eggs
  • 1 Tbsp. water
  • 1 Tbsp. butter
  • 6 large flour tortillas (8-10 inch)
  • 2/3 cup shredded cheddar cheese
  • 2/3 cup shredded Monterey Jack cheese
  • Sour cream (optional)
  • Salsa (optional)

In a skillet, brown the pork sausage. About halfway through the browning process, add the onions, peppers, and jalapenos. Cook until the sausage is browned and the vegetables are soft; remove from heat and set aside. Pour the eggs into the heated skillet; scramble and turn heat off. To assemble the burritos add a few heaping tablespoons of the sausage mixture, scrambled eggs and cheese. Then fold the tortilla up from the bottom, then fold in the sides, and the finish rolling the burrito up. Place in a dry skillet over medium heat seam side down. Brown on all sides. Serve with sour cream and salsa.

Strawberry Banana Cheesecake Salad

  • 8 oz. cream cheese, softened
  • 1/4 cup heavy cream
  • 3 Tbsp. honey
  • 1 tsp. vanilla extract
  • 2 lb. strawberries
  • 3 bananas
  • 3 Tbsp. fresh lemon juice

Rinse strawberries; pat away any moisture with paper towels, the outside of the strawberries should be dry. Hull and cut the strawberries into slices and add into a large mixing bowl. Peel the bananas and cut into rounds; add to strawberries. Pour the lemon juice over the bananas and stir until the fruit is mixed and coated with lemon juice; set aside. Add the softened cream cheese, honey, and vanilla extract into a separate mixing bowl. Using an electric mixer, whip until smooth, about 3-4 minutes. Scrape down the sides of the bowl with a spatula as needed. Add the heavy cream, about 1-2 tablespoons at a time, and whip until the mixture is smooth and well combined. Continue until all the cream is added, and be sure to mix well after each addition. Gently fold the cream cheese mixture into the fruit. Decorate if desired with sliced strawberries and bananas. Serve immediately or chill until ready to eat.
