#266 – Taco Casserole & Luscious Layered Blueberry Delight

Taco Casserole

1 lb. ground beef
1/3 cup miracle whip
1 cup salsa
2 cups crushed tortilla chips
2 tsp. chili powder
2 cups shredded Colby jack cheese

Preheat oven to 350 degrees. Brown hamburger; drain any liquid. In a separate bowl, mix salsa, miracle whip, and chili powder; add to browned hamburger and mix. In an ungreased casserole dish, layer half of the hamburger on the bottom, next, half of the crushed chips, and half of the cheese in the last layer; repeat layers. Bake uncovered for 20-25 minutes. Top with your favorite toppings, (tomatoes, onions, lettuce, etc.)

Luscious Layered Blueberry Delight

14 whole graham crackers
2 pkgs. Jell-O Vanilla instant pudding
4 cups milk
1 cup Cool Whip
1 – 21 oz. can blueberry pie filling

Line 9×13-inch pan with half of the whole graham crackers; break crackers to fit if necessary. Prepare pudding as directed on the box; let stand 5 minutes; fold in whipped topping and spread half the mixture over graham crackers. Add another layer of crackers, pudding mixture and end with a layer of graham crackers. Spread pie filling over top of layered crackers. Chill 3 hours before serving.
