Lazy Stuffed Peppers
- 2 Tbsps. olive oil
- 1 lb. hamburger
- 1 medium onion, finely chopped
- 3 bell peppers, seeded and diced large
- 2 cloves garlic, minced
- 1 can chicken or beef broth
- 8 oz. can tomato sauce
- 2 tsp. beef or chicken bouillon
- 2 tsp. Worcestershire sauce
- 1 tsp. Italian seasoning or oregano
- 1 cup long grain white rice, uncooked
- 1 1/2 cups shredded cheddar cheese
- 1 can diced tomatoes
Brown hamburger in oil in a large skillet. Add onion, bell peppers and garlic; stir to combine. Stir in diced tomatoes, broth, tomato sauce, bouillon, Worcestershire sauce, and Italian seasoning. Bring to a boil; stir in uncooked rice; reduce to low heat. Cover and simmer for 25 minutes, or until rice is tender. Remove from heat, stir lightly to fluff the rice. Sprinkle with shredded cheese and replace the lid. Rest for 10 minutes before serving.
Orange Salad
- 3 oz. package orange Jell-O
- 3 oz. cream cheese
- 1 cup miniature marshmallows
- 1 1/2 cup boiling water
- Small can crushed pineapple
- 1 cup Cool Whip
Dissolve Jell-O in boiling water; add cream cheese and marshmallows; stir until smooth. Chill until Jell-O is starting to set. Whip well, then add small can crushed pineapple and Cool Whip; stir until combined. Refrigerate for one hour prior to serving.
