Quick Pigs in the Blanket Casserole
- 1 small head of cabbage
- 1 lb. ground beef
- 1/2 cup chopped onion
- 3/4 cup Minute Rice (do not pre-cook)
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/2 cup grated Italian-style cheese
- 14.5 oz. can of diced tomatoes
- 10.5 oz. can tomato soup
- 1 1/2 cups water
Preheat oven to 350 degrees. Chop or cut cabbage into medium size pieces and spread on the bottom of a 13 x 9 inch baking dish. Brown the ground beef and onion. Stir in the rice, salt & pepper; spoon over cabbage and then spread the tomatoes over all. In a small pan, heat soup and water to boiling; pour over tomatoes. Sprinkle with cheese; cover tightly with foil and bake for 1 ½ hours. Fluff with fork before serving.
Rhubarb Hot Dish
- 3 eggs
- 1 cup cream
- 1 1/2 cups milk
- 1 cup sugar
- 4 Tbsps. flour
- 3 cups diced rhubarb
- Cinnamon
Preheat oven to 375 degrees. Beat eggs; add cream and milk; mix until combined. Add sugar, flour and mix well; add rhubarb; mix. Pour into 9 x 9 casserole dish and sprinkle with cinnamon; bake for 45 minutes to 1 hour.
