Biscuits and Gravy Casserole
- 1 lb. sausage
- 1 pkg. peppered sausage gravy mix
- 1 cup water
- 1 cup cheddar cheese, shredded
- 6 eggs
- 1/2 cup milk
- Salt and pepper to taste
- 1 can Pillsbury Grands Biscuits
Preheat oven to 375 degrees. Grease a 9×13-inch baking dish and set aside. In a large skillet, cook sausage over medium heat, breaking it up with a spatula, until browned and cooked through. In a medium bowl, whisk together the gravy mix and water until smooth. Add the gravy to the sausage and stir to combine. Simmer for 2 to 3 minutes, until the gravy is thickened. Remove from the heat and stir in the cheese until it is melted and combined. In a separate bowl, whisk together the eggs, milk, salt, and pepper. Spread the sausage gravy mixture in the prepared baking dish. Pour the egg mixture over the top, then top with the biscuits. Bake for 25-30 minutes, until the biscuits are golden brown, and the eggs are set.
Ambrosia Salad
- 4 oz. cream cheese, softened
- 1/4 cup powdered sugar
- 1 tsp. vanilla extract
- 1 cup heavy whipping cream
- 1/2 cup sour cream
- 1 15-oz. can drained mandarin oranges
- 1 20-oz. can drained pineapple tidbits
- 2 cups mini marshmallows
- 3/4 cup shredded sweetened coconut
- 8 maraschino cherries
- 1 pink grapefruit, peeled and cut into sections
- 1/3 cup toasted coconut chips
Add softened cream cheese, powdered sugar, and vanilla extract in a medium mixing bowl. Beat it with a hand mixer until it’s fully incorporated and creamy. Whip the heavy whipping cream in a separate bowl for about 2 minutes until soft peaks form. Add the cream cheese mixture to the bowl and whip it until it’s thick and creamy. Gently fold the sour cream into the whipped cream mixture until combined. Gently stir in the mandarin oranges, marshmallows, pineapple, and shredded coconut into the whipped cream mixtures. Do not over-mix. Cover the bowl and place it in the refrigerator to set overnight or for 24 hours. When ready to serve, garnish it with maraschino cherries, toasted coconut chips and grapefruit sections.
