Pepperoni Casserole

4 eggs
4 oz. cream cheese
1/3 cup whipping cream
1/2 tsp. oregano
1/2 tsp. crushed garlic
2 cups mozzarella cheese, divided
1 cup Parmesan cheese
1 cup pizza sauce
16 oz. pepperoni

Preheat oven to 350 degrees. Beat eggs and cream cheese in a bowl; add cream, oregano, and garlic; mix well. In a greased 9 x 13-inch baking pan, sprinkle 1 cup mozzarella and Parmesan cheese across the bottom. Pour creamed mixture over cheese. Back for 30 minutes or until bubbly. Remove from oven and top with pizza sauce, pepperoni and remaining mozzarella cheese. Place under broiler until cheese bubbles. Remove casserole from oven, slice and serve.

Triple Berry Angel Food Cake Roll

1 angel food cake mix (plus ingredients to prepare)
1/4 cup + 3/4 cup powdered sugar, divided
8 oz. cream cheese
1 1/2 cups heavy cream
1 tsp. vanilla
1 1/2 cups fresh strawberries, diced
1 1/2 cups fresh blueberries
1 1/2 cup fresh raspberries

Preheat oven to 350 degrees and line the bottom of a 10x15x1” rimmed baking sheet with parchment paper; do not grease the pan. Prepare cake mix according to directions. Pour into prepared pan and bake for about 20 minutes, until the top is golden and the edges start to crack. Loosen cake from edges of the pan while it’s still warm, it’s going to be a little sticky, but it should come away easily. Spread out a clean kitchen towel and sprinkle evenly with 1/4 cup powdered sugar. Flip warm cake out onto the towel, peel off the parchment paper and immediately roll up starting at the short end, WITH the towel inside. Let cool completely for 1-2 hours at room temperature. In a large bowl, beat the cream cheese until smooth. Add 3/4 cup powdered sugar, vanilla and cream; beat on low speed until combined, then on high speed for 3-4 minutes until fluffy and stiff peaks form. Unroll cooled cake; and spread half the filling on top with half the berries. Carefully roll back up, without the towel and place on a serving plate. Spread top and sides with remaining filling and berries. Serve immediately.
