Hawaiian Ham & Cheese Sliders

  • Cooking spray
  • 1/2 cup butter
  • 1 onion, minced
  • 3 Tbsps. Dijon mustard
  • 1 Tbsp. poppy seeds
  • 2 tsp Worcestershire sauce
  • 1 – 12 count package Hawaiian sweet rolls, split
  • 1 lb. sliced deli ham
  • 8 slices Swiss cheese

Preheat oven to 350 degrees. Spray a 9 x 13 inch baking dish with cooking spray. Melt butter in a saucepan over medium-low heat; cook and stir onion until softened, 5-10 minutes. Add mustard, poppy seeds and Worcestershire sauce; cook and stir for 5 minutes. Arrange the bottoms from each roll in a prepared baking dish. Spoon 2/3 of the onion mixture over the roll bottoms. Add ham and Swiss cheese to each roll. Put tops of rolls over the cheese layer. Brush the remaining 1/3 onion mixture over tops of rolls. Cover dish with aluminum foil; bake for 15 minutes. Remove foil and bake until tops of rolls are lightly browned – 5-10 minutes.

Corn Salad

  • 1 red pepper, chopped
  • 1 cup chopped green onion
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 bag chili cheese Fritos, lightly crushed

In a bowl, combine corn, red pepper and green onion. In a separate bowl, blend sour cream and mayonnaise together until combined; stir into corn mixture. Chill in refrigerator until ready to serve; add Fritos just before serving.
