Homemade Biscuits & Gravy

  • 2 cups pancake and baking mix
  • 2/3 cup buttermilk
  • 1/2 stick butter, melted, plus 2 Tbsps. Butter
  • 1 (16 oz) package pork sausage
  • 3 Tbsps. Flour
  • 1 Tbsp. Worcestershire sauce
  • 1 1/2 cups milk
  • 1/4 tsp salt
  • 1/4 tsp pepper

Preheat oven to 425 degrees. In a medium bowl, stir baking mix, buttermilk, and the 1/2 stick melted butter until soft dough forms. Drop 8 equal spoonful’s of dough onto an ungreased baking sheet. Bake for 14-16 minutes, or until golden brown.

In a large skillet over medium heat, melt remaining butter; cook 1 to 1 1/2 minutes, or until browned. Add sausage and cook 6-8 minutes, or until no pink remains, stirring to crumble sausage. Add flour; mix well. Add Worcestershire sauce, milk, salt and pepper; mix well. Cook 2–4 minutes, or until gravy thickens, stirring constantly.

Cut biscuits in half and spoon sausage mixture evenly on bottom halves. Replace tops and serve.

Apple Fajitas

  • 1 (12 oz) package of flour tortillas
  • 2 cans apple pie filling (cherry pie filling can be used too)
  • Cinnamon & sugar

Sauce

  • 1 1/2 cups butter
  • 1 1/4 cups water
  • 2 cups sugar
  • 1 1/2 Tbsp. flour

Preheat oven to 350 degrees; grease 9 x 13 in pan. Place 1/4 cup of pie filling in each tortilla; roll tortillas up tight and place close together in pan. Melt butter, water, sugar and flour either in microwave or on stove top over medium heat until bubbly; pour over tortillas. Sprinkle lightly with cinnamon and sugar. Bake for 30 minutes. Serve warm or cold with vanilla ice cream.
