German Pancakes

  • 4 tbsp. butter
  • 6 eggs
  • 1 cup milk
  • 1 cup flour
  • Dash of salt
  • 1 tsp vanilla

Preheat oven to 425 degrees. Melt butter in a 9 x 13 pan in oven while it is preheating. Place eggs, milk, flour, salt and vanilla in a blender; cover and process until smooth. Pour batter into baking dish with melted butter. Bake for 20 minutes or until golden brown and puffy. Optional: once out of oven, sprinkle with powdered sugar and serve with syrup or Quick Mixed Berry Topping

Quick Mixed Berry Topping

  • 2 cups frozen mixed berries
  • 2 tbsp. sugar
  • 1 1/2 tsp cornstarch

Toss berries, sugar and cornstarch in a large microwave-safe bowl until well combined. Microwave on high for 2 minutes. Stir and microwave on high until slightly thickened and steaming, about 2 1/2 minutes more. Serve with German Pancakes, angel food cake or topping for ice cream.
